Default Sous-vide

Anyone have any experience with Sous-vide cooking? I've noticed that you can get a Sous-vide machine that attaches to the side of pot for $200. I'm considering getting one.

This one has some good reviews. The only thing that bothers me is the idea of cooking in plastic for extended lengths of time.

I do. I already have a vacuum sealer. I'm paranoid about the safety when cooking something in plastic for long periods of time.

Don't be. The plastic in those sealer-bags can stand up to boiling for extended periodes, and while my knowledge of sous-vide style cooking is limited, it uses far lower temperatures.
