Default Today's Experiment: Braised Beef Shank and Ox-Tail Lasagna

I've got a pot-luck to go to tonight and I seem to be allergic to doing reliable standards in these situations, so I'm making a lasagna I've had in my head for a while. I seared off some beef shanks and ox-tail pieces, and now I'm braising them in San Marzano tomatoes and red wine, with herbs and spices and all that sort of stuff.

I appreciate the vote of confidence

Patience is going to be key... this stuff needs to be falling apart if it's going to work as a lasagna filling. Mind you, if worse comes to worst, I can stick it in the pressure cooker and finish it off that way. As it is, it's been sitting in the oven in my Dutch oven at 275 for a while. I'll check it in a couple of hours and see where it is then.

Hrrmmmm. Needs salt... I was salt-shy, because I was originally going to go with beef-stock as part of the braising liquid and that stuff is salty as heck, but I decided to stick with just the tomatoes and red wine. Hopefully the cheese will address this somewhat, but the sauce itself is a tad subtle.
